Chapter 6: Safely Purchasing Food

Student Learning Outcomes:

  1. Define the responsibilities of the purchasing and receiving department as it relates to food handling
  2. Identify the proper steps and necessary equipment needed during the receiving process.
  3. List receiving temperatures and quality measures of TCS foods.

 

Introduction

The first step in the flow of food is purchasing. Purchasing procedures should be in place to ensure food and supplies meet safety requirements.  Purchasing agents should ensure that vendors are:

  1. approved by the appropriate agencies,
  2. reputable, and
  3. follow all laws and regulations.
