35 6.5: Key Drop Deliveries

A key drop delivery in the food service industry allows distributors to deliver food and supplies to an operation when it is closed.  This method is a convenient way for facilities to receive goods when staff is not present and does not interfere with normal business hours.  The food service and the supplier will have a written agreement in place ensuring the process meets safety protocol.  The food service facility will provide the delivery personnel with a key to access specific areas of the facility.  The delivery personnel are responsible for correctly storing items.  As soon as the food service operations opens following a key drop delivery, the receiving personnel must ensure that items delivered and stored meet the requirements
