Contributors and Source Materials
This open educational resource has been updated and expanded from the Human Nutrition textbook created by the University of Hawaii at Manoa Human Nutrition and Food Science program, which was itself developed in part from the following open resources:
Accessibility Toolkit – 2nd Edition // CC BY 4.0
OpenStax Anatomy and Physiology // CC BY 4.0
Open Educational Resource Nutrition: Science and Everyday Application v. 1.0: // CC BY 4.0
An Introduction to Human Nutrition // CC BY-NC-SA 3.0
Chapters and sections were borrowed and adapted from the above existing OER textbooks to create the University of Hawaii’s textbook Human Nutrition. This work was also inspired by the Kansas State University Human Nutrition Flexbook. Without these foundational texts, a lot more work would have been required to complete this project. Thank you to those who shared before us.

About This Book
This textbook was created through Building a Competitive Workforce: Career and Technical Education (CTE) OER with Embedded Digital Skills, a $2.125 million project funded by LOUIS: The Louisiana Library Network and the U.S. Department of Education. This project supports a three-year initiative to improve access to and completion of CTE courses through the development of open educational resources (OER) courses, or courses that assign textbooks and other materials which are freely available to students.
Special Thanks
The efforts of Emily Frank and Amelia Brister of the Affordable Learning Initiative of LOUIS: The Louisiana Library Network made a profound contribution to this text and the related online course materials. The creators are deeply grateful for their advice, encouragement, and support.
